Thing types

The one that matters
Only to-dos behave differently: they are the only type that carries forward to the next day until completed or canceled. Everything else stays on the day you wrote it. See carry-over.
Notes
Numbering is computed. Use the number type rather than typing digits, and it renumbers itself when you insert or reorder.
Quote and code replace the type, because a quoted checkbox is not a meaningful object. That behaviour is configurable in Settings Appearance & Accessibility Remove type for quotes and code.
Photos are not a type. A thing with a photo keeps whatever type it had.
